Follow up inspection:
-A digital probe thermometer was present.
-It was reviewed that this probe thermometer must be cleaned and sanitized and wiped dry with a single-use paper towel before it is used check internal food temperatures.
-Cooling temperatures were reviewed with the Operator: Food must be cooled rapidly from internal temperatures of 60 degrees C to 20 degrees C within 2 hours and then 20 degrees C to 4 degrees C within an additional 4 hours (total time of 6 hours).
-100 ppm chlorine sanitizer was available inside a bucket with a clean wiping cloth.
-Cleaning improvements were noted to the floor and 3-compartment sink.
