401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The handwashing sink, by the walk-in-freezer, had items in the sink basin and the paper towel dispenser was empty. Staff are unable to wash their hands when the sinks basin is blocked, and unable to dry their hands correctly without paper towel.
Corrective Action(s): - Immediately remove all items from the sink basin and inform staff that no items shall block or be placed infront of the sink or in the sink basin.
- Immediately fill the paper towel dispenser and ensure it is always kept full.
During the inspection, staff cleared the hand basin of items and filled the paper towel dispenser.

304 - Premises not free of pests [s. 26(a)]
Observation: Observed mice droppings on floor and lower shelves in the dry storage room.
Corrective Action(s): -Immediately clean up the mice droppings and sanitize all surfaces the droppings came into contact with.
- Immediately complete a thorough cleaning of the dry storage room's floor, walls, and shelves to remove all food debris. Take everything out of the dry storage room and wash from floor to ceiling.
- Replace any shelf or food container that can NOT be cleaned.
- Immediately clean the exterior surfaces and lids of all food containers in the dry storage room to remove food debris.
- Immediately place all open packages of food in food grade containers and cover with a tight fitting lid.
- Block any opening/holes found in walls or around pipes, in the dry storage room.
- Contact a professional pest company to inspect, monitor and eliminate the mice.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Food debris found under equipment, shelving unit, racks, and tables in the kitchen and waitress area. Staff are cleaning exposed surfaces, but are not moving or lifting items up and/or away from walls to clean the surfaces under them. The food debris will attract pests.
2) The ceiling tiles in the kitchen have accumulated dust on them. The dust will fall into food and contaminate it.
3) The dry storage room floor, shelves, and walls have food debris on them. This will attract pests.
4) The exhaust canopy has accumulated grease on the filters and canopy. The service sticker indicates that the next service is overdue (Nov. 27/22). The grease will attract pests and it also is a fire hazard.
Corrective Action(s): 1) Wash and sanitize the mentioned areas every day. Instruct staff to move equipment, tables, and shelves so the surface underneath is exposed for cleaning. Instruct staff to remove all items off table, shelves and counter tops, so the surfaces underneath are exposed for cleaning. Do NOT just clean around items.

2) Wash the ceiling tiles to remove the dust and grease, OR purchase and install new ceiling tiles.

3) Take every item out of the dry storage room and wash all floors (under the shelves), walls, and the shelves themselves to remove food stains. If the food stains can NOT be washed off of shelves, replace the shelves with new ones that are sealed, durable (hard plastic or metal) and cleanable.

4) Contact a professional company to clean the exhaust canopy and chimney.

Observation: The door seals/gaskets of the prep coolers (6x door seals), across from the cook station, are broken. Cold air is constantly leaking out of the cooler.
Corrective Action(s): Replace all the broken door seals/gaskets with new ones. Contact a refrigeration company to order new door seals/gaskets.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; and thermometers present.
- Low temperature dishwasher had [Cl2] between 50-100ppm. Test strips present.
- Handwashing sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles and in cloth buckets had [Cl2] of 200ppm.
- Foods stored in food grade containers; covered; foods stored in groups with raw proteins below RTE foods; and foods stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory, and improvement noted from previous inspection. However, mentioned areas need more attention to cleaning on a regular basis.
- FoodSafe certified staff present.
