302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. Sanitizer solution in 3-compartment sink only has ~50 ppm quaternary ammonium compound (quats) residual.
2. Both quats spray bottles did not contain any quats residual.
3. Dough cutter / mixer machine still contains a small amount of debris inside.
4. Numerous pizza trays on-site are greasy and saturated with oil and grime. They were visibly unwashed, yet placed underneath the table for re-use.
Corrective Action(s): 1. Sanitizer was reformulated and contains approximately 400 ppm quats residual (as per manufacturer's directions and requirements).
2. Quats spray bottles were refilled with fresh sanitizer solution and contains 400 ppm quats
3. Dough cutter was re-cleaned and sanitized at time of inspection.
4. Refrain from using any pizza trays that have not been properly washed and sanitized. You MUST properly wash and sanitize pizza trays after use and store them in a designated area. Fully wash all pizza trays that will be used for preparing pizzas tomorrow. A follow-up inspection will occur to check that this has happened.

Comments

Routine inspection conducted. The following observations were made:

1. General Comments
- Premise well-lit, facility generally maintained in good sanitary condition

2. Temperatures
- Beverage cooler at 4C
- Front pizza warmer at approximately 70C
- "Deep-dish" pizza hot-held at 70C inside pizza oven
- Walk-in cooler at 4C
- Chest freezer at -18C
- NOTE: Temperature logs were not maintained today. Ensure that you maintain temperature logs every day to identify if and when equipment is failing or needs servicing
- NOTE: Time-control system in place for pizzas stored on cooling rack, which is kept at room temperature. Pizzas were made approximately 30 minutes ago, according to the timer system. Staff state that the pizza is not served if kept after 2 hours

3. Hygiene and Sanitizing
- Hand wash stations in restroom, front-of-house, and back-of-house stocked with hot/cold running water, liquid soap, and single-use paper towels
- Quats spray bottles were at 400 ppm after it was refilled
- 3-compartment sink present and equipped with drain plugs. Staff aware of proper manual warewashing method
- Knives in knife holder in sanitary condition

4. Storage
- Food products stored at least 6" off the floor
- All food products covered with food-grade lids when not in use
- Shelving is in sanitary condition
- Products are dated according to when they should be used by
- Take-out containers and ingredient trays are stored securely on shelving; ingredient trays are all properly washed and sanitized

5. Administrative
- Staff member on duty has FoodSafe 1 (Expiry: 2023)

A follow-up inspection will occur tomorrow to ensure that all pizza trays are properly cleaned and sanitized. As stated earlier, ALL pizza trays must be properly cleaned after use and stored in a secure location.
