Observation (CORRECTED DURING INSPECTION): Noticed soup and porridge being stored between 38-42 degrees C. Hot holding units were turned down after the lunch rush.
Corrective Action(s): Discard the soups as they have been sitting in the danger zone. Ensure that soups are always maintained hot above 60 degrees C (interntal tempeature of the food item).

Follow up inspection:
-Decline noticed in the number of mice droppings, however some droppings still noticed behind the deep freezers ( in hallway) and
behind glass door freezer (across from the double sink).
-Floor wall junctions have been sealed. good.
-Facility is short staffed, therefore having issues with maintaining daily cleaning schedule. Ensure
to remove all food and grease build up from underneath and behind the equipment as this is critical to the success
of pest control program.

Following items still require your attention.
-Ensure to remove/discard any junk equipment or packaging materials
-Clean up any droppings seen under the shelving and underneath/behind equipment
-Clean up the soft drink concentrate spill on the concentrate storage shelf. This shelf also requires de-cluttering and organizing
-Place more traps (glue traps or snap traps) in consultation with the pest control company.
