303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer was not available on-site at the time of inspection. Bleach bottle was empty and had just run out as per Operator. Facility had just open at the time of inspection.
Corrective Action(s): Ensure 100 ppm chlorine sanitizer is available during your hours of operation to properly sanitize food contact surfaces and prep. surfaces. Operator purchased bleach during the inspection and setup 100 ppm chlorine sanitizer to re-sanitize prep. surfaces.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Handsink near the front service area lacked hot running water. Faucet could not be turned properly to enable access to hot running water from this handsink.
Corrective Action(s): Make the necessary repairs to enable access to hot running water at the handsink near the front service area; Correct by April 29, 2022. In the meanwhile, use the handsink near the 2-compartment sink to wash hands prior to handling food, in between different activities, and prior to handling food. Operator was observed to be washing his hands properly during the inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Several containers of food inside the walk-in-cooler were uncovered.
Corrective Action(s): Operator covered the food products inside the walk-in-cooler during the inspection to protect them from potential contamination. Please ensure food is kept covered in good grade materials (e.g. storage lids or saran wrap) in all storage units.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Interior surfaces of the pizza tray storage bins had accumulating food debris and grease on them.
2. Flour was observed spilled on the floor near the dry storage area close to the dough mixer.
Corrective Action(s): 1. Clean and sanitize the interior surfaces of the pizza tray storage bins to remove the buildup of food debris/grease; Correct by April 28, 2022. Ensure these bins are cleaned and sanitized more frequently to maintain them in a clean condition.
2. Clean the floor to remove the flour spill to keep the food premises in a clean condition and prevent any potential breeding grounds for pests.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation (CORRECTED DURING INSPECTION): Walk-in-cooler lacked a thermometer inside it at the time of inspection.
Corrective Action(s): Operator moved a thermometer from an empty unplugged fridge and moved it inside the walk-in-cooler. It was reviewed to check the refrigeration unit temperatures regularly (upon opening the food premises and every 2 hours between use) to ensure food is stored safely at or below 4 degrees C.

501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
Observation: Operator's FOODSAFE level 1 certificate has expired on May 10, 2021.
Corrective Action(s): Ensure that you as the Operator maintain valid FOODSAFE Level 1 or equivalent course training. Operator stated they would renew their FOODSAFE level 1 training by retaking a FOODSAFE Level 1 course as soon as possible over the next three months.

Comments

Handsink in the back service area was supplied with liquid soap, hot and cold running water, and single-use paper towels.
2-compartment sink was supplied with hot and cold running water. Drain plugs were available.
Walk-in-cooler and other refrigeration units in use to store cold potentially hazardous food were at or below 4 degrees C.
Freezer unit temperatures were satisfactory.
Slicer appeared to be in a clean condition.
No signs of recent pest activity were present at the time of inspection.
Permit to operate was available on-site and it was posted in a conspicuous location during the inspection.
Signature on this report is not required due to the COVID-19 pandemic.
