Observation (CORRECTED DURING INSPECTION): Pizza stored in the left side of the hot holding unit measured with an internal temperature of 54C. Right side was measured at 64C.
Corrective Action(s): Operator discarded the pizza from the left side and increase the temperature gauge to 65C. Ensure hot food are hot held above 60C at all time.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray bottles were empty at the time.
Corrective Action(s): Operator prepared 200 ppm bleach sanitizer in spray bottles. Ensure food sanitizer is available during operation. Clean and sanitize all food contact surfaces on site.

- Chest freezers at -18C or less.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 3 compartment sink available for manual dishwashing.
- Food prodcuts stored off the ground.
- General sanitation satisfactory.
- No pest activities observed at the time.
- Ensure temperature records are maintained on a daily basis and must be available for review during inspections.
