- Handsink maintained with hot & cold running water, liquid soap and paper towel. Ensure that staff are washing hands with warm water to properly wash off debris and microorganisms.
- 100ppm chlorine sanitizer present
- Low temp. dishwasher achieved >50ppm chlorine
- Walk in cooler and sushi prep cooler were at <4C; freezer was at <-18C
- Proper thawing (ie. chicken) implemented
