Observation (CORRECTED DURING INSPECTION): Dipper-well for used/dirty scoops was not turned on.
Corrective Action(s): All scoops were washed and sanitized in the dishwasher at time of inspection. Staff turned the dipper-well on.
Ensure the dipper-well is always turned on for holding in-use scoops.

Observation (CORRECTED DURING INSPECTION): One food-contact surface sanitizer pail (located on rack next to waffle station) measured 0 ppm Quats.
Corrective Action(s): Staff changed the solution at time of inspection. 200 ppm Quats detected. Ensure to change your sanitizer pails according to scheudle or sooner if visibly dirty/cloudy.

Observation: Fruit/drain flies noted at the bar and back kitchen areas.
Corrective Action(s): Have your pest control technician service for fruit/drain flies, and ensure to keep all areas clean and dry. Also flush drains nightly.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Undercounter burger coolers are not functioning properly. No food stored in these coolers.
Corrective Action(s): A work order has already been placed. Do not use these coolers to store potentially hazardous food items until they are capable of consistently maintaining temperatures at 4C or colder.
Correct by: 3 weeks.

Comments

- Routine inspection.
- All hand washing stations were accessible/unobstructed and properly supplied with hot and cold running water, liquid soap, and paper towels.
- Food preparation sink in the back maintained in sanitary condition.
- Quat-based sanitizer solution available at 200 ppm for sanitizing food-contact surfaces in all other pails. *One pail was at 0 ppm (see violation code 302 above).
- High-temperature dishwasher reached 75C at the dish surface during final rinse cycle. Good, minimum of 71C at the dish surface is required.
- All other coolers measured 4C or less. *Undercounter burger coolers are awaiting servicing/repair - See violation code 308 above.
- Freezer temperatures satisfactory.
- Hot-held food items (soups, gravy, hollandaise, etc.) available at 60C or hotter.
- Temperature records available and up to date. Accurate thermometers available onsite.
- Food storage practices satisfactory.
- Large equipment maintained in sanitary conditions. Scoops were properly stored and in-use utensils on cook line were stored in ice in between uses. *Dipper-well was not in use for ice cream scoops - see violation code 301 above.
- Bar glasswasher measured 12.5ppm iodine.
- Dry storage area satisfactory.
- Regular pest control servicing in place. No signs of rodent activity noted at time of inspection. *Fruit fly/drain fly activity noted - see violation code 304 above.
- FoodSafe-certified staff onsite.
