Corrective Action(s): - Clean up moisture/water and food debris on the floor. Determine the source of the moisture and resolve the issue. - General sanitation of deli prep and raw poultry prep area satisfactory. See violation above regarding sanitation issue in rotisserie area. - Handsinks (deli prep, rotisserie area, and raw poultry prep area) supplied with hot and cold running water, liquid soap and paper towel - Ambient temperature of deli prep area 6C; raw poultry prep area 8C - Walk-in cooler (shared with Meat dept) 0C - Open refrigerated display unit 2C - Rotisserie chicken in hot holding unit was 67-73C. Temperatures records for cooking appeared maintained and up to date. - Quats sanitizer present in warewashing sink for manual warewashing. Concentration of quats solution was 200ppm - Buckets with quats sanitizer solution present in all 3 areas for use with wiping cloths on food contact surfaces. Concentration of solutions were 200ppm quats. - No signs of pest activity noted.
