Observation: Food stains found on the exterior surfaces of cupboard doors & warming/proofing door, and the inside drawers of the warming/proofing equipment. This will attract pests.
Corrective Action(s): Wash these surfaces with hot water and soap, and then sanitize with bleach and water at least once a week, or after each use.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler was 4C and thermometer present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher rinse cycle had a temperature of 77.9C at the plate's surface as per max/min thermometer.
- No expired foods present.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- No signs of pests.
- A bottle of bleach SHALL be present at all times to ensure proper sanitization (killing of germs) of surfaces and equipment is being done. The chemicals present (Ultra Wipes, Green Works) do NOT meet health standards of sanitization to achieve a 2 log reduction in bacteria/germ numbers.
