1. Ventilation canopy is saturated with grease.
2. Wire shelving in walk-in cooler and bar cooler contains a large amount of grime and mould along every shelf.)

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Multiple infractions were noted:
1. Designated sanitizing pail in main cook line contained liquid soap mixed with sanitizer.
2. Deli slicer contained food debris along the back end of the sliding component (teeth area). SAFETY WARNING: The deli slicer was not unplugged at time of inspection. The deli slicer should be unplugged after each use.
3. Can opener was not in sanitary condition and contained grime at the back end.)
Comments

Follow-up inspection to routine conducted on March 13, 2018.

Previous deficiencies have been addressed:
- Area under deep fryer is now in sanitary condition
- Ventilation slats, can opener have been cleaned and run through the dishwasher
- Teeth of deli slicer have been cleaned-in-place, deli slicer not in use and unplugged at time of inspection - good
- Handwash sink is available and adequately stocked with hot/cold running water, liquid soap, and paper towels. It is unobstructed - ensure that it remains this way
- Corners of walk-in cooler are now in sanitary condition
- Sanitizing pails available at 200 ppm. Head chef has notified employee that soap is not to be mixed with sanitizer.

Note: Head Chef was unable to provide verification of FoodSafe at time of inspection. Chef will email inspector with FoodSafe or AHS certificate. (Sous chef on-site has FoodSafe)

2) Temperature Control
- Chicken and meats in prep cooler in cook line have now been arranged on multiple shelves to increase circulation
- In the previous inspection, smaller batches were added to the cooling wells to maintain the sauces at 4C. In the follow-up today, cooling wells maintained at 3.5C at time of inspection - good. Reminder: For sauces that require refrigeration, ensure that a lid is on top when not in use to help maintain it at 4C or below
- EHO reviewed Food Safety Plan with head chef. Head chef will probe beef patties periodically to ensure that it is fully cooked as per Earl's Food Safety Plan and operating guidelines
