Observation (CORRECTED DURING INSPECTION):
(1) Scoops in pest proof containers were submerged in bulk foods.
(2) 2 containers of cut vegetables in walk-in cooler were not covered.
(3) Container of raw marinating chicken was stored on the floor under shelving unit in walk-in cooler.
* Corrective actions: (1) Ensure handles for scoops are not submerged in foods and are accessible without potentially contaminating foods with hands.
(2) Ensure stored foods are covered when not actively using to prevent contamination.
(3) Food must be stored at least 15cm off the floor to prevent contamination. Raw meats should be stored on the bottom shelf and separate from raw vegetables and ready to eat foods.

Comments

This inspection done by an EHO student.
- Handsinks supplied with hot and cold water, liquid soap and paper towels.
- Premises relies on manual dishwashing using 3 compartment sink. 3rd compartment was filled with sanitizer, measured 200ppm QUATS as per test strips.
- Wiping cloths submerged in bleach solution sanitizer, measured 100-200ppm chlorine as per test strips.
- Rice and ice scoops stored in a sanitary manner.
- Ice machine was clean and in good condition.
- Walk-in cooler: 3 deg.C
- 2 door cooler: 4 deg.C
- 2 door freezer: -13 deg.C (items were solid to touch)
- Prep cooler: 4 deg.C undercounter, 5 deg.C inserts
- Hot holding units in front: 62 deg.C - 70 deg.C
- Rice cookers: 65 deg.C and 68 deg.C
- Pest control is on site.
- No signs of pests during inspection.
- General sanitation is satisfactory.
- Chemicals for cleaning and sanitizing are stored away from food.
- Health permit posted.

* Operator and staff reminded to keep inserts cover closed during down times to prevent surface temperatures from reaching above 4 deg.C for an extended period of time.
