-Paper towel and liquid soap are provided at hand washing sink.
-Quats sanitizer >200ppm
-Separate cutting boards are used for lamp, beef and chicken

Discussed;

- Have a bucket of sanitizer for all wiping rags.
-Clean and sanitize all cutting boards- if it is being used continuously then very 2 hrs clean and sanitize. Put through dishwasher at the end of work.
-Have a test strip to check concentration of sanitizer (quats or bleach)
