302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Food containers to store food observed greasy, soiled and not washed properly. Also noted meat slicer has not been properly cleaned and sanitized.
Bleach water is available in spray bottles only at the time of this inspection.
Corrective Action(s):
- Do not use unwashed equipment, tomato slicer, onion slicer, food containers until they are washed then sanitized using 100 ppm bleach water solution. Ensure to fill up sink with sanitizer, test it then soak containers for at least 3 minutes then store to air dry.
- Ensure meat slicer is thoroughly cleaned, then sanitized using bleach water sanitizer. Make sure no dried food soil left on this equipment.

209 - Food not protected from contamination [s. 12(a)]
Observation: In external dry storage, it was noted that bags of onions stored on floor. Also, items such as Jerry can, generator, power bar cord and other items are stored with food in the same area. Mice dropping noted behind tables and on window sills. Flour stored on crates but some spilled on floor as well.
Corrective Action(s):
- Separate food from other items. Ensure food is stored at least 6 inch off the floor.
- Clean and sanitize this storage room. Mice droppings are to be cleaned. Ask your pest control company for traps and follow up to deal with mice issue.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings observed throughout the kitchen, behind and under equipment and in hard to reach areas. Mice droppings also noted in external dry storage across the parking lot. Operator stated that they have pest control company visit once a month. No traps observed at the time of this inspection.
Corrective Action(s): Following actions are to be taken regarding mice issue:
- Deeply clean and sanitize areas affected by mice droppings. Ensure to use proper PPE in order to clean. Bleach water can be used as effective sanitizer. Ensure no trace of mice activity left.
- Deeply clean and sanitize all food surfaces that might be effected by mice activity.
- In kitchen, Pay attention to areas around dough mixer, freezer, dough table and around 3- comp sink at the back.
- Ensure no food or food debris left on floor after closing for the night.
- Contact your pest control company for an immediate visit. Keep records of their visit, and their recommendations/ actions. Keep invoice/recipts.

- After cleaning, any new signs of mice activity, take actions and ensure food prep areas are cleaned and sanitized before use.

Observation: Dried food soil noted almost everywhere in the kitchen. This creates unsanitary condition to prepare food.
Corrective Action(s): Following actions must be taken:

- Thoroughly clean kitchen from top down. All surfaces must be wiped clean then sanitized with 200ppm bleach water. Ensure to use proper PPE.
- Floor specially under equipment must be cleaned and be free of food denris and mice droppings.
- Unneeded items, broken equipment and items that are not used for food operation must be remove from the kitchen. Make space for necessary items.
