Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Some pizza toppings and condiments were at about 8-10C after lunch rush. Some of the inserts were covered with a single plastic lid where cold air can easily escape. Bus pan was double stacked with ice underneath storing cheese and other garnishes.
Correction: Ensure to find proper lids so that each insert is properly covered to retain temperatures. Recommend using perforated tray to layer ice under.

Walk-in cooler adjusted and is reading at 3C with a thermometer placed inside.
Refrigeration units are equipped with working thermometer inside now.
Cover/lid obtained for inserts used in coolers in the front.
Perforated stainless steel bus pan used to store cheese on ice by pizza station.
Back area lighting improved.
Rat and mice droppings removed in the back area, flour room, electric panel/alcohol room and office.
Hole sealed in the front by pizza oven. Large hole in office shall be sealed after routing is completed, same goes for flour room when electric work is done.
Chemical levels being recorded for dishwasher and glasswasher, binder available by unit.
New test strips obtained.
Sanitizer bottles labeled.
