Observation (CORRECTED DURING INSPECTION): One bottle of quaternary ammonium compounds (quats) sanitizer was measured at 100 ppm or less quats.
Corrective Action(s): Bottle was emptied and refilled with quats sanitizer which tested at 200 ppm. Ensure that quats sanitizer is maintained at 200 ppm for effective sanitizing of food contact surfaces/equipment/utensils.

Observation: Walk in freezer was measured at -8 degrees C at time of inspection.
Corrective Action(s): Ensure that walk in freezer is capable of maintaining frozen foods at -18 degrees C or less. Have freezer serviced if necessary.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Multiple large containers of ice were observed in the lower section of the preparation cooler. Upper food inserts were stored in ice. It was stated that the preparation cooler was not working correctly and that a new preparation cooler is on order. No foods were stored in the lower section.
2. Rinse gauge does not appear to be in good working order. Rinse gauge reads "105 degrees C" and does not move for the entire cycle.
Corrective Action(s): 1. Ensure that new preparation cooler is in place and is capable of maintaining foods at 4 degrees C or less.
2. Ensure that rinse gauge on dishwasher is functional in order to verify that minimum temperatures are being achieved at the manifold. Date to be corrected: August 13, 2018.

Observation (CORRECTED DURING INSPECTION): One unlabeled spray bottle containing an unknown substance was observed on site. Staff unable to identify contents of bottle.
Corrective Action(s): Spray bottle emptied at time of inspection. Ensure all chemicals, cleansers, and similar agents are properly labeled to identify contents to prevent accidental misuse and/or mixing.

Routine inspection conducted:

- Walk in cooler at 2 degrees C
- Under counter coolers at 2 to 3 degrees C
- Milk/cream dispensers at 1 to 3 degrees C
- Internal temperature of foods probed at preparation cooler at 4 degrees C or less. Food inserts are stored in ice. It was stated by management that internal temperatures of food inserts are monitored every hour and ice is added as needed.
- Hot holding internal temperatures at 60 degrees C or more
- Internal temperature of reheated soup at greater than 74 degrees C
- Thermometers available for cold holding units
- A probe thermometer is available on site
- Labeled buckets with wiping cloths and utensil cups contained quaternary ammonium compounds (quats) sanitizer at 200 ppm.
- Utensils/equipment in sanitary condition
- High temperature dishwasher measured 73 degrees C at the utensil surface (minimum 71 degrees C at the utensil surface)
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Staff wear clean clothing and hair is secured in hair nets with hats
- No signs of pest activity observed at time of inspection. Premises is serviced by a pest control operator. Pest control report reviewed at time of inspection.
