Observation: Small deep fryer added to premises without prior approval. Deep fryer was moved to kitchen area by stoves where adequate ventilation of grease, smoke, water vapors, and objectionable odors can be maintained.
Corrective Action(s): Deep fryer can only be used when placed under ventilation hood. It MUST remain under ventilation hood. Submit an updated food safety plan and floor plan to include the use of the deep fryer in the premises.

Observation: Deep fryer has been added to premises without approval. Sanitation plan does not include use of a deep fryer.
Corrective Action(s): Update the sanitation plan and send a copy to the undersigned no later than April 6, 2021 for review. The plan should explain, in detail, cleaning of the deep fryer unit.

Observation during inspection:
- Deep fryer is not indicated in food safety plan, sanitation plan, or floor plan on file. Deep frier has been moved to kitchen area where adequate ventilation is located.
- Menu items have changed food safety plan must be updated to include new items
- Personal items have been removed and placed away from food and food contact surfaces.
- Stored clean dishware observed stored inverted at dish area on shelves.
- Food and food contact surfaces observed stored off the floor.
- No evidence of pests.

Corrections Needed by April 6, 2021
- Submit an updated Food Safety Plan of all your new menu items, including food your deep fry, that are not included in your previous plan
- Submit an updated floor plan to include the deep fryer
- Submit and updated Sanitation Plan to include the cleaning of the deep fryer
