Observation (CORRECTED DURING INSPECTION): Several sandwich items (potentially hazardous foods) in upright glass door cooler were at 8 deg C, such as "egg bites", sandwiches with cheese, etc. Foods had been in cooler at these temperatures for at least a day. There was a tray of sauces that was blocking the cooler fan.
Corrective Action(s): All foods probed to be above 4 deg C were discarded during inspection. Tray of sauces was removed during inspection and temperature of cooler returned to <4 deg C.

Observation: 1) Display cooler was at 11 deg C at time of inspection. No food was stored inside. Manager had indicated that this cooler has not been at 4 deg C or less for almost a week, but is still in process of being repaired.
2) Upright glass door cooler was at 9 deg C air temperature. There was a tray of sauces blocking the cooler fan.
Corrective Action(s): 1) Correction order issued for the display cooler. Repair display cooler such that it maintains an internal temperature of 4 deg C or less consistently. Do not store any foods inside this cooler.
2) Tray of sauces removed and upright glass door cooler was able to achieve <4 deg C air temperature by end of inspection.

Note: Discussed with current listed owner regarding the ownership change process. All documents (application, food safety/sanitation plans, etc) must be submitted to the district EHO prior to conducting the initial inspection for the ownership change.

Routine inspection conducted:
-Handsinks in coffee area and in the sandwich prep area are equipped with liquid soap, paper towels, hot/cold running water

-Sandwich prep cooler in corner: 3.9 deg C
-Dairy cooler at 3 deg C
-2 domestic cooler/freezer combo units (1 in back area, 1 by the sandwich prep area): both coolers at 4 deg C or less
-All freezers at -18 deg C or less
-Mechanical dishwasher achieved 50 ppm chlorine residual after rinse cycle at plate level
-3 Compartment sink used to wash/rinse dishes prior to being placed in the dishwasher
-Test strips available on site for staff to test dishwasher after each cycle
-Quat Spray sanitizer was at 200 ppm Quats, spray bottles available in back area as well as front service area.
-Manager and staff on site have valid FoodSafe certification
