306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Observed plastic pallet for bottles underneath the stainless steel worktables next to the dough mixer and underneath the shelving unit in the walk-in cooler. This obstruct cleaning underneath the equipment. Heavy food debris observed underneath the stainless steel worktable and shelving unit where the plastic pallet are situated. Routine Inspection conducted today. Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels. QUATs sanitizer buckets and dispenser measured at 200ppm. 3-compartment sink available. Low-temperature dishwasher measured at 200ppm chlorine final rinse. Prep cooler, walk-in cooler, and stand-up cooler measured at 4C or lower. Walk-in freezer, chest freezer measured at -18C or lower. Food observed to be stored at least 6 inches off the floor. Operator informed that in-use utensils are washed and sanitized every 30 minutes. No method of tracking. No signs of pests observed. NOTE: Purchase timer to track in-use utensils to be washed every 30 minutes. Corrected by: April 13, 2023. Overall, facility is well organized.
