Observation (CORRECTED DURING INSPECTION): Condiments and sauces stored at the sandwich cooler measured with internal food product temperature of 9C.
Corrective Action(s): Transfer the food into the walk-in cooler immediately. Cold potentially hazardous food must be stored at 4C or less at all times.

Observation (CORRECTED DURING INSPECTION): Used rice scoop was stored on top of the rice cooker at ambient temperature.
Corrective Action(s): Used rice scoop must be cleaned and sanitized immediately after use. Alternatively, store the scoop in ice water after use.

Observation (CORRECTED DURING INSPECTION): Quaternary ammonium sanitizer spray bottle measured with less than 50 ppm in concentration. Sanitizing bucket was also empty. This is a repeated violation.
Corrective Action(s): Discard and refill the bottle and bucket with 200 ppm quaternary ammonium sanitizer from the dispenser. Clean and sanitize all food contact surfaces immediately.

Corrective Action(s): Service / fix the sandwich cooler to ensure the ambient air temperature is maintained at 4C or less. Do not use this cooler to store cold potentially hazardous food until then. Correct by: Mar 4, 2022.
