Observation (CORRECTED DURING INSPECTION): - During time of inspection, spray bottles containing bleach solution was measured at 50ppm
- Operator corrected during time of inspection
Corrective Action(s): -Ensure chlorine sanitizer solution (bleach solution) always have a concentration of 100-200ppm
- Ensure all staff are trained on how to mix sanitizer
- 2.5mL bleach solution to 1 L water

Observation: During time of inspection, observed:
1) Fan covers in walk in cooler had moderate dust accumulation
2) Grease accumulation on shelving by sweets preparation area
3) Slight food spillage accumulation within main prep/line cooler
Corrective Action(s): Ensure the above mentioned are focused on and that these areas are cleaned and sanitized in addition to regular cleaning duties Correct by: 1 week

Observation: Wall mounted dispenser was not 'wall mounted' during time of inspection
Operator informed that another soap dispenser will be used instead of the wall mounted one

- All temperatures meet health requirements:
* Walk in cooler #1 at 4C
* Walk in cooler #2 at 4C
* Prep/line cooler at 4C
* All chest freezers at -18C
- Low temperature dishwasher available, adequate chlorine sanitizer residual of 50ppm at final rinse
- Test strips available for testing sanitizer concentrations
- No evidence of pests detected during time of inspection (2 tin cats checked, no captures)
- Good storage practices observed in walk- in coolers, all products kept covered with lids
- Screen door in use during time of inspection
