-all fridges at 4C, freezers at -18C and hot holding at 60C or above
-dishwasher at 71C at dish
-freezer outside at -18C
-general sanitation good
-bleach at 100ppm
-maintain a daily temperature log sheet for all fridges, freezers and hot holding units.
