- Routine inspection conducted. Chef was preparing for lunch service at time of inspection.
- Hand washing sink was properly supplied with hot and cold running water, liquid soap, and paper towels in designated dispensers.
- QUAT-based sanitizer solution available in spray bottles and in pail for storing wiping cloth at 200 ppm.
- High-temperature dishwasher reached 71C at the dish surface during final rinse cycle. Good.
- Upright two-door cooler measured at 3C.
- Upright freezer measured at -18C.
- No hot-holding of food at time of inspection.
- Temperature records were up to date and well maintained. Accurate thermometers available.
- Food storage practices excellent. All food stored properly covered and labelled, with good separation between raw and ready-to-eat food items.
- Reviewed cooling and reheating procedures - OK.
- All equipment maintained in sanitary conditions. General sanitation also satisfactory.
- No signs of pest activity noted
- Chef has valid FOODSAFE certificate.
