Observation (CORRECTED DURING INSPECTION): Paper towels were not accessible from the paper towel dispenser in the staff washroom.
Corrective Action(s): Ensure handsinks are kept supplied with single-use paper towels, liquid soap, and hot and cold running water. Staff opened the paper towel dispenser to enable access to the single-use paper towels for interim use. Operator informed they would repair the dispenser and replace the battery.

Observation: Food safety plan requires revisions that were previously provided to the Operator.

Observation: 1. Paper towel dispenser in the staff washroom does not automatically dispense paper towels. Battery may require replacement.

2. Operator provided two new sink plugs during the inspection as staff had lost two of the three previous sink plugs. One of the new sink plugs was inadequately sized.

3. Leak was present at the faucet of the 3-compartment sink. This is an outstanding issue from the previous inspection.
Corrective Action(s): 1. Repair or replace the paper towel dispenser in the staff washroom so that it remains in good working order; Correct within 1 week.

2. Obtain a third functional sink plug for the 3-compartment sink; Correct by May 5, 2023. Manual ware-washing procedures were reviewed with staff during the inspection.

3. Ensure the appropriate repairs are made to prevent the leak at the 3-compartment sink; Correct as soon as possible within 1 week. Operator informed they would have this corrected within 2-3 days.

Comments

Meat processing area:
Designated handsink was supplied with liquid soap, hot and cold running water, and single-use paper towels.
Upright cooler designated for raw meat storage was at 4 degrees C or less. It was equipped with a thermometer.
Probe thermometer was available.
Invoices for raw meat were available: Shams Halal Meat (chicken and frozen lamb leg) and Meadow Valley Meats (boneless chuck).
Knives were stored in a washable container. Operator has obtained a magnetic knife strip, however still needs to wall-mount it.
It was reviewed to clean, sanitize, and air dry the band saw and meat grinder immediately after each use. Staff informed this equipment is currently used once per day.
3-compartment sink was supplied with hot and cold running water. Two functional sink plugs were available. Operator is obtain a third functional sink plug.
200 ppm Quaternary ammonium compounds sanitizer (QUATS) was available in a labelled spray bottle.
No signs of recent pest activity were evident at the time of inspection.

Note: Obtain the appropriate chemical test strips to monitor the concentration of the surface sanitizer.

Convenience Store area:
Refrigeration units (display cooler and grab and go cooler) were at 4 degrees C (40 degrees F) or less. Display cooler is being used for a few pre-packaged products for the convenience store and it was not being used for storage of raw meat.
Second display cooler was empty and not in use. Ensure it is maintained at 4 degrees C or less prior to stocking it with cold potentially hazardous food in the future. Operator is aware to store raw meat in separate refrigeration units than pre-packaged ready-to-eat food from approved sources.
Temperatures of both upright freezers was satisfactory.
Refrigeration units were equipped with thermometers.
No signs of recent pest activity were evident at the time of inspection.

Ensure to contact the Environmental Health Officer to apply for and obtain health approval prior to making any changes to the floor plan, equipment, food products offered for sale, and/or food operation.
