Observation (CORRECTED DURING INSPECTION): Refer to Code #308; sanitizer did not have adequate concentratoin of active ingredient. Dispenser did not work properly. All surfaces must be re cleaned and sanitized with bleach sanitizer at 100-200 ppm (1/2 teaspoon of bleach per 1 litre of water) until the dispenser is fixed
Corrective Action(s): Required operator to use bleach sanitizer instead until dispenser can be fixed. Staff onsite created the bleach sanitizer at the time of inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Observed food debris and grease accumulation behind and under equipment. The accumulation may lead to pest infestation and/or fire hazard. Regular cleaning must be conducted to maintain sanitary conditions.
Corrective Action(s): Required operator to clean and sanitize the area noted. Regular cleaning schedule must be set and followed.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: DDBSA/Lactic Acid sanitizer dispenser is not dispensing adequate concentration of sanitizer. When tested with test strips (both inspector's and facilities), both chemical concentration was almost at 0 ppm. The chemical tube and feed is proper but not dispensing adequate concentration. Calibration may be have be done to ensure everything is working properly.
Corrective Action(s): Required operator to call the technician to adjust/repair the dispenser to allow adequate concentration of sanitizing chemical to be dispensed. Please use bleach solution 100-200 ppm for sanitization until the dispenser is repaired.
