Observation (CORRECTED DURING INSPECTION): The following food items stored in the prep cooler measured above 4C:

> 1 container of cheddar cheese blocks dated August 27 measured 9.2C
Corrective Action(s): The above mentioned items were discarded at time of inspection.

Corrective Action(s): Clean and sanitize above mentioned areas. Remove all food debris.
> Maintaining a high level of sanitation will help to prevent the presence of pests.

> Handsinks supplied with hot+cold water, liquid soap and paper towels.
> 200ppm QUATS sanitizer available at the source (3 comp sink) and in spray bottles.
> Meat slicers were in use at time of inspection. They are cleaned and sanitized every 2 hours, disassembled and fully cleaned/sanitized every 4 hours.
> Temperature and sanitation logs are maintained.
> Staff wear hair protection and gloves.
**Reminder that glove usage does not replace handwashing. Handwashing must take place before donning and after removing gloves.
> No signs of pests.
