Routine inspection:
2 compartment sink equipped with hot and cold running water, liquid soap and paper towels. Additional large tub filled with 100-200 ppm bleach for manual warewashing. Test strips available for use.
200ppm quats available for surface sanitizing. Follow manufactuer's instructions for use (squeeze cloth 10 times to release chemical) and verify strength with test strips.
FOODSAFE requirements met at time of inspection.
Temperature monitoring records maintained and available for review.
Sliding glass door cooler 4 C or below. .
Upright cooler at 4 C or below.
No hot holding at time of inspection. Warming units turned on and ready to received reheated products.
Storage area freezer at -18 C or below. Domestic cooler at 5 C and freezer section at -10 C (manager adjusted setting at the time of inspection). Ensure cooler is at 4 C at all times and freezer is at -18 C.
