Observation (CORRECTED DURING INSPECTION):
- Ecolab Power Smart sanitizer in spray bottles measured over the allowed range of concentration. Test strip showed bright yellow color which indicated that the concentration was greater than 1130 ppm for DDBSA and 3010 ppm for Lactic Acid.
Corrective Action(s):
- The sanitizers were diluted with water and the final concentration measured at 700ppm DDBSA and 1875ppm Lactic Acid. Operator to contact Ecolab to adjust the sanitizer dispenser.

Comments

- All handsinks (front, kitchen, washroom) are fully equipped with hot and cold running water, liquid soap in a dispenser and single use paper towel.
- All coolers at 4C or below.
- Chest freezer at -17C.
- Ice machine in sanitary condition. Scooper stored outside in a designated container.
**Operator has replaced the commercial dishwasher to a low temperature type - supplied by Ecolab. Final rinse reached 56C and rinse water measured 50ppm chlorine - Good.
- More rodent traps were installed as per last inspection report corrective action. No rodent droppings were observed at the time of inspection. Ensure to have a copy of the pest control report available for review after each visit.
