Observation (CORRECTED DURING INSPECTION): 1. Found potentially hazardous baked goods room temperature holding with out accurate time tracking or discard records.
2. Staff on duty unaware of importance of time tracking or discarding at the end of the time.
Corrective Action(s): 1.Must keep accurate time tracking of potentially hazardous foods and keep logs of number discarded at the appropriate time limit. This continues to be a repeat offense.
2. Retrain all staff so they are aware of the importance of time tracking and discarding. FOODSAFE training may help.

Observation (CORRECTED DURING INSPECTION): 1. No sanitizer had been made up since opening 5 hours earlier.
2. Sanitizer coming out of dispenser was only 100 ppm quat.
Corrective Action(s): 1. Ensure sanitizer is made up and used on food contact surfaces on a regular basis throughout the day.
2. Ensure dispenser can dispense 200 ppm quats, manually prepare until repaired. Test strips onsite.

Observation: Found build up of flour and debris under all equipment, shelving and bins.
Corrective Action(s): When cleaning the floor must ensure the entire floor is properly washed (i.e. move white bins, use mop/broom all the way under shelving units not just to the edge.
