Observation (CORRECTED DURING INSPECTION): 10L container containing 5L of soup was measured at an internal temperature of 7 degrees C (Large volume / low surface area container). Soup stored in upright 1-door cooler.
Note: Soup prepared >24h prior, was not removed from cooler today per operator.
Corrective Action(s): Discarded. Discussed cooling procedures with operator. Although ice bath is used for cooling, per operator, verify internal food temperatures during cooling process to ensure food is cooled properly from an internal temperature of 60 degrees C to 20 degrees C within 2 hours, then from 20 degrees C to 4 degrees C within the next 4 hours. Discussed additional ways to help facilitate rapid cooling (e.g. shallow container, ice wand, freezer).

Observation: Few pieces of wood lining wire racks in dry storage area are unfinished.
Corrective Action(s): Ensure wood is finished, or replaced, to provide a surface that is smooth, non-porous, easy to clean and suitable for the intended purpose. Exposed wood may absorb moisture over time and is not easy to clean and sanitize. Date to be corrected: March 18, 2022.

Upright 2-door cooler at 4 degrees C.
Cooling drawers under cooking equipment at 1 to 2 degrees C.
Sandwich cooler at 3 degrees C (below) and 2 degrees C (above).
Under counter 2-door cooler at 4 degrees C.
Upright 1-door freezer at -19 degrees C.
Upright 2-door freezer at -16 degrees C.
Ice cream freezer at -18 degrees C.
Hot holding internal food temperatures at greater than 60 degrees C.
Thermometers available for cold holding units. Probe thermometers on site for internal food temperature checks.
Prepped food is covered and dated. Raw and ready-to-eat properly organized.
Hand sinks accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
Bleach water sanitizer available in labeled spray bottles at 100 ppm chlorine.
Low temperature dishwasher measured 58 degrees C and 50 ppm chlorine in the rinse residual at the utensil surface.
Equipment and utensils stored in sanitary condition, including deli slicer. Deli slicer is disassembled, washed, rinsed, then sanitized following each use.
Staff personal items stored in designated area away from food.
General sanitation excellent. No signs of pest activity observed.
