Observation (CORRECTED DURING INSPECTION): Potentially hazardous food (PHF) items stored in both prep insert coolers registered a surface level temperature above 4 deg C. Internal temperatures registered between 5-7 deg C. Food product was filled to the top in the inserts. PHFs were only stored in the coolers for <1 hour.
Corrective Action(s): - Staff had moved the PHFs were moved to a working cooler that registered a temperature at or below 4 deg C.
- Staff then filled the inserts to the half way mark with the PHFs. The internal temperature of the PHFs registered at or below 4 deg C. The turnover of the PHFs in the inserts is <2 hours.

Routine Inspection
- All cooler units registered a temperature at or below 4 deg C (see code 205)
Note: reviewed storage practices of the walk-in cooler to increase air flow.
- All freezer units registered a temperature at or below -18 deg C
- All hot holding temperatures registered at or above 60 deg C
- All handwashing stations supplied with hot and cold running water, liquid soap and paper towel
- Low temperature dishwasher is available for mechanical warewashing, sanitizer registered at 50 ppm chlorine on plate surface during final rinse cycle
- Food contact sanitizer buckets registered at 100 ppm chlorine
- Two compartment sink is available with drain plugs
- Observed adequate thawing procedures under running cold water
- Cookline and vents are maintained in a satisfactory manner
- Overall sanitation of the facility is satisfactory
- No signs of obvious pest activity, licensed pest control services are in place
- Ice machine maintained in a sanitary manner, scoop is stored outside
- FoodSafe Level 1 - Operator was unable to locate certificate. Operator will provide email to District Health Inspector with a copy.
