Comments

- Premises processes pita bread, croutons, and pita chips. Frozen prepackaged baklava is stored onsite - baklava is not handled onsite.

- Handsinks provided with liquid soap, papertowels, hot and cold water.
- Staff wear hair restraints (hairnets and beard nets) and uniforms in production area. Visitor sign-in procedures in place.
- Cooler: 4 deg C (yeast storage)
- Freezer: -19 deg C (frozen baklava)
- Food storage for dry ingredients appear satisfactory. Storage is organized, dry ingredients are protected from contamination.
- Noriquat (Quats based sanitizer) used for sanitizing food contact surfaces and equipment. Follow manufacturer's directions for use. Quats test strips available to verify sanitizer concentration.
- General sanitation of premises appears satisfactory.
- Regular pest control services provided by Orkin.
- Continue to monitor for pest activity. Report new and/ or increased pest activity to your pest control company.
- Follow all recommendations provided by your pest control company.

Note: Some areas of the flooring in the production area are beginning to bubble/ peel/ lift. Operator is aware of deficiency and is planning to correct issue in the next few months.
