Observation (CORRECTED DURING INSPECTION): Red bean mixture made in the morning and placed in large containers.
Corrective Action(s): Place in smaller containers to facilitate cooling. Food must cool from 60-20C in 2 hours or less and from 20-4C in 4 hours or less.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
1) Dishwasher did not have any detectable chlorine.
2) Staff stated they were directed to wash, rinse and sanitize small blue cups, metal water cups and utensils in the front two compartment sink during busy hours.
Corrective Action(s):
1) New bleach solution fed into machine and primed. 50ppm chlorine detected. Test dishwasher every day, not every five days. Re-wash all equipment.
2) All dishware and equipment must be washed in the dishwasher. The front two compartment sink is not meant for warewashing. This is unacceptable.

Observation (CORRECTED DURING INSPECTION):
1) Handwashing station in back kitchen did not have paper towels readily available; paper towels kept by front display case.
2) Staff observed to wash gloved hands.
Corrective Action(s):
1) Repair dispenser, or purchase proper paper towel rolls for the dispenser.
2) Gloves are single-use items. They cannot be re-washed. This is a repeat violation.
