Cooler covers stored on floor. CORRECTED DURING INSPECTION - items washed and sanitized immediately
Due to lack of available cooler space staff have stored raw meat above ready to eat food items.

Cooler covers are never to be stored on floor as this is unsanitary.
Ensure raw meat is stored on bottom of cooler units.

- Anywhere else significant food debris has accumulated

Corrective Action(s): Cleaning needs to improve. Current state of facility is unacceptable and leading to cockroach infestation. Ensure deeper cleaning and more frequent cleaning occurs.

Observation: The following items are broken and in need of repair:
- Walk-in cooler unit
- Two door stand up cooler unit
- Cold water faucet at dishwasher not working properly
- Cooler covers broken and not tight fitting to under counter cooler unit.
- Under counter three door cooler unit across from grill at temperatures of 16 degrees Ambient air temperature. Internal temperatures of food items found to be at temperatures of 13 to 20 degrees Celsius.

NOTE: repair technician is to have compressor for two door stand up tonight and facility is currently using two domestic coolers. Technician arrived on site during inspection

- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 50 ppm Chlorine at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Test strips available for use
- Receipts available for inspection - for baked goods
- Pest proof containers for all dry storage items
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Good hand washing practices observed
- FOODSAFE level on or equivalent Certified staff present during inspection

NOTE: facility has changed menu and is including buffet as part of lunch time offerings. Prior to changing any menu item ensure approval is obtained from Fraser Health. If Buffet service is to continue update Food Safety plan to FHA and submit for review.

EHO to return tomorrow for reopening. Ensure cleaning has occurred. Ensure two door stand up cooler unit and three door undercounter cooler unit have been repaired and are maintaining temperatures of less than or equal to 4 degrees Celsius. Obtain thermometers.
