203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation: Hot Noodle soup ( Pho) @ 70 degrees C was being cooled in a big plastic bucket in the cooler.
Corrective Action(s): You must cool hot soups in the original cooking pots using ice water bath in the sinks. Once it is cooled to room temperature it must be transferred to the coolers. Ensure foods are cooled fro 60 to 20 C within 2 hours and then from 20 to 4 C within the next 4 hours. (immediately).

Observation: Build up of grease and food debris noticed in several areas of the kitchen. The food prep and storage areas are disorganized
Corrective Action(s): The following items/areas require thorough cleaning.
1. Clean floors throughout the remove food debris especially underneath the behind equipment and coolers.
2. Do not store any food items or equipment on the floor.
3. Clean interior of all coolers as well as the exterior surfaces
4. Clean the ceiling tiles especially around the vents.

Observation: Door gasket found to be broken on the upright freezer.
Corrective Action(s): Replace the door gasket/seal so that it doors close properly ( By August 15, 2019).

Observation (CORRECTED DURING INSPECTION): Drywall damage noticed behind the small deep freezer in front serving area likely from the freezer hinges.
Corrective Action(s): Repair the damaged drywall. Cover the damaged sections in the interim to preven contamination of food packaging. Do not store any bags or food packaging behnd the deep freezer ( immediately)

* Ensure that meat slicer and all of its parts must be thoroughly cleaned after each use as folllowing:
-Wash all parts of the machine (including back of the blade) using hot soapy water.
-Rinse thoroughly to remove soap
-Wipe off with Quats sanitizing solution @200 ppm.
-Air dry before reassembling.

* Clean around the wok station to remove noodle spills and
clean floor underneath the cook line.
All dry food items must be stored in a secure manner.
