Comments

- Temperature Control: No concerns noted this date. Temperature gauges are to be securely fastened inside all refrigeration units. Monitoring required.
- Mechanical Dishwasher: Low temperature (chlorine) = Dishwasher
- Ensure all food contact surfaces are washed and disinfected after use or on a timely manner. (ie: 3-4 hours)
- Wiping cloth storage discussed. Limit the amount of cloths stored on top of work surfaces. Cloths, used on food contact surfaces, must be stored in a sanitizer at all times. (Sanitizer: 1/2 tsp bleach per litre of water.)
- Food Storage: Thawing procedures discussed.
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed.
- Sanitation: Facility is to be kept clean and organized at all times. Cleaning of "hard to reach" areas are to be conducted routinely. (ie: Behind/under counters and equipment - coffee grinder, recycling area.)
- Pest Control: Monitoring required.
- Garbage, Recycling and Composting Storage: All items are to be stored in covered, rodent proof containers.
- Structurally: Deteriorating window shelf previously noted. Upgrades required.
- Food Safe trained staff are required to be on site at all times.
- Food Safety Plan and Sanitation Plan are to be kept on site for reference.
