Routine inspection conducted: Kitchen Manager was not on site at time of inspection. This facility/kitchen provides meals for poverty relief on Mondays, Wednesdays, and Fridays. As well, this facility is a rental/commissary kitchen for other vendors, each of whom have their own dry storage closets and coolers/freezers that they are each responsible for. Facility has 3 walk in coolers (2 in warehouse, 1 in kitchen): all at 4 deg C or less
Walk in freezer at -15.1 deg C
-Room beside main kitchen has various mixers/equipment used by the vendors. There are 2 freezers in this room used by the church, both at -18 deg C or less. There is also a 3 compartment sink and handwash sink inside this room (used as prep sink). Dishes are not washed at the 3 compartment sink in this adjacent room, but are brought to the commercial dishwasher and 2 comp sink area in the main kitchen.
- Foods in cooler and freezers are covered and protected from contamination
-Dry storage area (in locked room) was organized, all foods stored off floor
-High temperature dishwasher achieved 73.3 deg C on rinse cycle at dish level
-Chlorine sanitizer in surface sanitizer spray bottle at 100 ppm chlorine residual
-General sanitation good
-No signs of pests
-Foodsafe certificates kept in a binder. All staff have renewed their FoodSafe level 1 certificates.
