Observation (CORRECTED DURING INSPECTION): Quats concentration in santizing buckets, 3 compartment sink at below 50 ppm. Dispenser at 200 ppm quats. Less than 50 ppm quats cannot sanitize food contact surfaces properly. Allows growh of pathogens or their toxins.
Corrective Action(s): Discard and refill sanitizing buckets, 3 compartment sink with 200 ppm quats from dispenser. Always verify concentration with test strips.
