Observation (CORRECTED DURING INSPECTION): Ice wands for Ace Walk-in Freezer (separate from main food service) stored directly on the ground or on the shelves.
Corrective Action(s): Maintain the ice wands in washable containers / clean trays as these will be going directly into the foods.

Observation (CORRECTED DURING INSPECTION): Again observed workers towel drying dishes after the washer -this was noted in the previous Routine Inspection
Corrective Action(s): Dishware and utensils must be air-dried after use cloth towel drying may recontaminate the dishware

NOTE: recommend additonal drying space through additional 2nd tier shelves in the dishpit area

When cooling down foods leave only a small gap for the steam to release (ie. with lids/food grade wrap)

-High temperature washer 71.2 deg C at plate level as per probe thermometer

Chemical Controls:
-Sanitizer buckets and dispenser at >200ppm QUAT residual

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridges, hot holders and mechanical washer
-ensure corrective actions are followed upon when required parameters are not met

General Sanitation very good
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests

Professional pest control comes on a regular basis: Orkin comes in weekly

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
