302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A) No sanitizer solution made up for kitchen area. Sanitizer spray bottle for bar area didn't have any chlorine in it. Staff made sanitizer for the back and added bleach to the spray bottle for the bar.
B) Food debris noted on the meat slicer. Operator said it was last used last night. This issue has been noted on previous inspections.
Corrective Action(s): A) Ensure 100ppm chlorine sanitizer is made fresh daily and is readily available for use in all food preparation areas. Keep reusable wiping cloths stored in sanitizer solution to prevent microbial growth, otherwise, use single use paper towel to wipe.
B) Ensure meat slicer is taken apart and thoroughly washed and sanitized after each use.

Observation: A) Lights in kitchen above dishwasher were uncovered.
B) Staff washroom opens into kitchen area

Observation (CORRECTED DURING INSPECTION): Back door was open at time of inspection.
Corrective Action(s): Keep back door closed or obtain a screen to prevent the entry of pests.

Observation: Prep cooler unit turned off/not working. No food in under compartment. Food in inserts on ice - small amounts left out only for lunch/dinner rush.
Corrective Action(s): Repair/replace prep cooler unit.

Comments

All hand wash stations were fully equipped with soap, paper towel, hot and cold running water.
All functional cooler units in use were 4C or less except for prep cooler unit which was turned off/not working. Food in inserts placed on ice and in unit only for lunch and dinner rush. Operator to repair/replace prep cooler unit by next routine inspection. See violation code 308 for more detail. Ensure food is turned over within two hours if unable to maintain 4C or less.
Freezers - 12C tp -18C (Ensure all frozen potentially hazardous foods are stored at -18C or less).
No hot holding available at time of inspection.
General sanitation satisfactory. Focus on hard to reach areas during 'deep cleanings'.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Low temperature dish washer had 50ppm chlorine.
