Observation: Meat slicer in the Packaging Area observed to have built-up of food debris along and underneath the guard.
Corrective Action(s): Clean and sanitized the aformentioned item. Corrected by: May 5, 2023.

Observation (CORRECTED DURING INSPECTION): Manager informed that the Packaging Area food contact surfaces is cleaned and sanitized with only hot portable water rinse.
No sanitizer spray bottle available at the time of inspection.
Corrective Action(s): Educated operator that food contact surfaces must be cleaned and sanitized the aformentioned area with portable water rinse followed by QUATs sanitizer measured at 200ppm to air dry. Prepare chlorine sanitizer to measure at 100-200ppm or QUATs sanitizer to measure at 200ppm readily available to ensure that food contact and equipment are cleaned and sanitized with food-grade sanitizer.

Observation (CORRECTED DURING INSPECTION): Observed 2 boxes of raw meat thawing in the production area measured at 6.8C air ambient temperature. Operator informed that it will be thawing in the production area overnight.
Corrective Action(s): Transfer the aformentioned items into a cooler measured 4C or lower.

Comments

Routine Inspection conducted today.
At the time of inspection only one staff was on-site cleaning the meat bandsaw side. The sausage heavy equipment is washed by a staff who was not present and staff and manager on-site was not aware how it was washed. Packaging side was cleaned by other staff who was not present at the time of inspection and staff on-site is unaware how equipment is washed at the packaging area.

Facility produces ready-to-eat deli meats (e.g. pepperoni, salami, sausages) and raw meat preparation and vacuum packed.

Staff informed that meat bandsaw side is sprayed down with portable water, followed by QUATs spray measured at 200ppm that sits for 10 minutes before rinsing with portable water.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
3-compartment sink available. Production Area measured below 10C.
Walk-in coolers measured at 4C or lower. Walk-in freezer measured at -18C.
Ice machine in sanitary condition.
Food observed to be stored at least 6 inches off the ground.
No signs of pests observed.

NOTE: Replace Packaging labels to indicate location of packaging to Surrey not Delta.

Overall, facility is well organized.
