Observation (CORRECTED DURING INSPECTION): Pho broth made the previous night was at 14C. Broth made today was at 32C to 40C in the cooler. This is a continuing violation.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. Broth was discarded at the time of inspection. Do not use the ice wand to cool foods until the temperature has dropped to at least 60C. Also, do not place hot foods into the cooler - it will raise the temperature of the cooler unit and also decrease the life span of the cooler unit.

Comments

-Follow-up inspection to May 1, 2019.
-Food items are now stored on food grade materials.
-Pho broth is continually improperly cooled. Broth is cooled in large pails (approximately 20L) and is not able to cool to 4C within 6 hours.
-Facility is currently in the process of an ownership change. The current owners are still considered legal owners and the prospective owner is considered a staff member. Prior to completing an ownership change, the following is required: food safety plan (representative of actual operations), sanitation plan, all equipment must be in good working order, and a Health Permit fee is required ($125.50 cheque payable to Fraser Health for June 2019 to march 31, 2020). Facility currently does not have approval for an ownership change.
-Prospective owner has completed FoodSafe Level 1.
