306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Dishwash area: dirty dishes and containers are being piled up on the clean dish draining area.
Dish draining area has a lot of food residue, crumbs and food stains.
3rd compartment (sanitizing sink) has scum layer that is orange and greasy. Food debris in sanitizing sink.
Dishwashing staff cleaned and sanitized during the inspection, thank you.
2. Back area for dry storage: trails of grease and chocolate syurp leaking from bags and boxes are on the ground, in the way of dry goods and racks.
3. Some food counters, underneath equipment in main prep line and front end for drinks have litter and grease build up.
4. Bag of candy canes with chocolate fingerprints on the bag: stored in an open container of chocolate chips.
Corrective Action(s): 1. Corrected during inspection, thank you.
Please inform all staff that there is one way flow of dishes. Dirty dishes can be placed at the other end and not at the clean, sanitized area.
2. Clean up spills as they occur.
3. Main prep line area needs a better degreaser and more cleaning.
Sides of equipment and behind equipment should be wiped down and cleaned on a regular basis.
4. Cover and store items to prevent contamination.
Use scoops, avoid direct hand contact with food items.

Observation: Hand wash station at back closest to drive through window:
Cold water handle is not working and is broken.
Hot water: no hot water after 10-20 seconds of running.
Corrective Action(s): Repair cold water handle to ensure hot and cold running water is available for hand washing.

Hand wash sinks supplied with liquid soap in dispensers and paper towel in dispensers.
Fridges and coolers <4C.
Freezers <-18C.
Hot holding units >60C.
Chlorine tablets in water for soaking dish cloths: >100ppm chlorine.
Quat sanitizer >200ppm Quat at the dispenser.
Purple degreaser and Yellow Hydrogen Peroxide spray bottles also being used although no bottles appear at food prep stations.
Ice scoops are stored in a clean bin or separately, thank you.
Dry storage area appears cleaner than before.
No signs of pests at the time of inspection.
Back door sweep is made of bristles, some light showing through, please monitor and replace door sweep as necessary.
