Observation: Cutting board on prep cooler is heavily stained. Hardened food debris observed on tongs.
Correction: Clean and sanitize the cutting board and tongs. Use a diluted bleach solution to help remove stains on the cutting boards (1/2 teaspoon household bleach per 1L of water).

- General sanitation has improved. Ensure the walls and areas behind the pizza oven are also cleaned.
- All food containers are covered.
- Update your sanitation plan/cleaning schedule to include all areas that need to be cleaned. Include procedures on how to clean as well as frequency. Send a copy to the health inspector within 1 week.
