Observation: Staff member on site did not have FoodSafe while operator was not present.
Corrective Action(s): Owner came on site during inspection. Discussed with owner that when he is away, even just for deliveries, his staff member needs to have FoodSafe when left in the restaurant alone. Ensure that your staff member takes FoodSafe level 1, discussed upcoming dates for the course for the staff member to take.

Walk in cooler was at 3.6 deg C
Prep cooler (bottom) was at 1 deg C. Ensure to keep Top part closed when not in use and only fill with enough food for 2 hours. Do not overfill the top part of the prep cooler.
Chest freezers at -18 deg C or less
Hot held unit with pizza is >60 deg C
2 compartment sink with bleach available on site to sanitize
Bleach spray bottle is at 100 ppm chlorine residual
Foods in coolers are covered
General sanitation is good (floors, equipment)
No signs of pests during inspection
Ice cream freezer not in use. As mentioned by previous inspector, if you wish to serve ice cream you will need to rennovate and add sinks in the front area. Owner also discussed plans to rennovate kitchen. Ensure to submit any floor plans before beginning any renovations as they must be approved first before construction/changes are made.
