Observation (CORRECTED DURING INSPECTION): Knives were stored in the spacing between countertops.
Corrective Action(s): Do not store knives this way, as spacing between countertops cannot be easily cleaned and sanitized. Only store knives in clean, designated knife holders/racks.

Observation (CORRECTED DURING INSPECTION): Dishes were not being properly sanitized; dishwasher rinse cycle was not hot enough (see code 308).
Corrective Action(s): Wash all dishes using dishwasher, and sanitize with 100 ppm bleach solution in 2-compartment sink for at least 2 minutes and allow to air dry. Instructions for manual warewashing provided to staff. Staff prepared 100 ppm bleach solution for sanitizing dishes in 2-compartment sink at time of inspection.

Observation (CORRECTED DURING INSPECTION): 1) Packaging of spring rolls was being done on kitchen floor by walk-in cooler at time of inspection.
2) Two containers of raw meat were found stored above vegetables in walk-in cooler.
3) Scoops were stored directly in dry ingredients.
Corrective Action(s): 1) Do not do any food preparation/packaging on the floor. Only prepare food on clean surfaces intended for food prep.
2) Always store raw meat below ready-to-eat foods to prevent contamination of ready to eat foods.
3) Store scoops in separate clean containers to prevent hands and handles from contaminating food.

Observation: High-temperature dishwasher was not reaching 71C at the plate surface on final rinse cycle. (82C at the temperature gauge)
Corrective Action(s): Operator has already called for repair of dishwasher. Service technician is waiting for the parts required to fix the dishwasher (parts have been ordered and have not arrived yet)
