Observation (CORRECTED DURING INSPECTION): This is a repeat violation. Beef was thawing in the centre compartment of the 3-compartment sink, in between the sanitizing compartment (filled with sanitizer) and washing compartment (filled with dirty dishes). No cold running water was used for thawing the beef.
Corrective Action(s): Beef was relocated to the prep sink under cold running water at time of inspection. DO NOT use the 3-compartment warewashing sink for defrosting items. Communicate this to all employees to ensure that they thaw in the prep sink.

Follow-up inspection to routine conducted on July 3, 2018 (RPT#: JMAA-B2BW2Z).

Cooling wells are now at 4C. You may now place potentially hazardous foods inside. Do not fill up the cooling wells all the way to the top. Use smaller batches and refill as needed.

Pending issues to be addressed from routine inspection:
- Rubber lining in hot-holding display unit has detached. Ensure that a work order is put in to replace it. Date to be corrected by: July 10, 2018
- Obtain display thermometer for hot-holding unit. Date to be corrected by: July 10, 2018
