Observation: Hot food bring prepared in trailer outside.
Access to inside is through back door and hallway into atrium.
Atrium has coolers and freezers lining a pathway.
Small kitchen inside, no stove or ventilation (one hot plate), intended for cold food preparation.
Also small shed outside being used to hold cold foods.
This current layout has not been reviewed or approved by this Health Office for operation.
There is a leaking 2" pipe that is plumbed from the trailer to the septic tank.
Unknown how the shed greywater hook up or the cooler water is connected.
Pictures taken.
Corrective Action(s): Disconnect gas and water connections.
Stop operation of the trailer until appropriate sewage install is approved by the Drinking Water Officer.

Observation: Flow of hot food is not protected from contamination when made and brought out from the trailer.
Food is made in trailer outside, walked outside to back door, staff opens door to hallway (public space access to washrooms), through atrium to kitchen where it is further prepped and garnished to go out for service.
Corrective Action(s): Cover any food in containers or with lids if bringing through this way to inside.

Observation: Temporary shelter outside (exposed to environment, appropriate or permenant walls, open ceiling, no door or seal) has gas and water hook up and fryers.
Unsecure access to food, gas, water by people, pests or animals.
Corrective Action(s): Move cooler indoors.
Clean and sanitize
Cease all operations outdoors.
Refer to Fire Department for Propane tank storage outdoors and gas hook up.

Cob webs, food debris under racks.

2 sticky traps for flies are hanging in main kitchen above clean dish storage.

Outdoors:
Shed - line cooler top and lid has layer of dust and debris.

Corrective Action(s): Sweep floors.
Clean all surfaces.
Move line cooler to indoors.
Move sticky traps for flies to location not above clean dishes or food prep.
Invest in light traps.
Monitor for pests.
Maintain clean on regular basis.

Observation: Trailer outside: leaking roof onto oven below.
Second leak area forming in trailer.
Temporary tarp has been placed over the whole trailer to prevent leaks.

Cease operations in trailer.

Observation: Inside trailer, facet leading to sanitizer dispenser is leaking.
Inside kitchen, line cooler lid tends to fall off when being opened.
Pipe leading to septic tank from trailer is leaking greywater/wastewater onto the ground.
Corrective Action(s): Fix sanitizer dispenser.
Fix cooler lid.
Remove pipe from trailer as this is an unapproved install.
Refer to Drinking Water Officer for consult on next steps.

Kitchen Indoors:
Hand wash station indoors is fully supplied with liquid soap and paper towels in dispenser.
Cold water is supplied, but will run warm eventually.
Dishwasher >71C (76C) for max final rinse sanitizing.
Sanitizer for utensils and surfaces in bucket and spray bottle >200ppm (400ppm).
Dry storage on racks.
Hot plate used for reheating food.
All food items are covered and protected.
Thawing observed inside coolers, covered (chicken breasts).
Coolers <4C.
Freezer <-18C.

Wine tasting area:
Cloths supplied for hand hygiene: please ensure you are using this as single use after hand washing or supply paper towels in dispenser in this area.
Dishwasher for glasses: 100ppm chlorine.

Trailer:
Hot holding beef in vacuum seal and water bath >60C.
Coolers <4C.
3-compartment sink for utensils.
No grease trap - follow up with Drinking Water Officer.

Posted capacity of facility:
65 persons for wine tasting
50 persons for patio

Operators said that weddings hosted may have up to 150 persons in atrium.
