Observation: The dishwasher was fixed and a part was replaced. Operator advises the hot water sanitizing rinse was satisfactory but then appeared to not be hot enough. Currently they are still sanitizing dishes and utensils manually (200ppm detected). The sanitizing rinse for the dishwasher today was only 67 C and should be 71 C as measured inside of the machine (and temperature sticker did not change colour). There is hot water being supplied to the pot sinks.
Corrective Action(s): Operator has called technician to re-check the dishwasher. Do not use the dishwasher to sanitize dishes (do manually with chlorine solution and use disposable utensils if possible to cut down on dishes etc.) until it can provide a hot water temperature of 71 C/ 160 F for the final sanitizing rinse. You may wish to purchase a dishwasher thermometer if the gauge is not accurate as well. Correct as soon as possible as this has been an ongoing problem.
