Well maintained and operated. Sanitation is very good. Refrigeration measures < 4 C. Wiping cloth sanitizer measures 200 ppm Cl.
Label the mint sauces and the potato salad in your display fridge with the name of the product, and the name and address of the business.
Provide receipts for the eggs in the display fridge showing the name and address of the supplier.
When food is being made ready-to-eat as your sauces and potato salad, a food service permit must be obtained.
